Waffles are definitely a favourite in my home. With their crispy outside and fluffy, soft inside, these are the perfect addition to a weekend brunch. They also freeze very easily and can be prepared in a hurry by popping them in the toaster on busy mornings.
Ingredients
1 cup whole-wheat flour
2 tsp baking powder
1 tbsp sugar
1 egg
3/4 cup cow's milk or soy beverage
1/8 cup melted butter or oil
1/2 tsp vanilla extract

Maple Syrup
Yogurt
Granola
Nut Butter
Coconut Flakes
INSTRUCTIONS
Preheat waffle iron
In a small bowl, combine egg, milk, melted butter or oil and vanilla extract.
In a medium bowl, comine dry ingredients.
Add egg mixture to dry ingredients. Mix to combine.
Spray waffle iron with cooking spray. Pour 2/3 cup of mixture into the iron. Close lid.
Bake for about 5 minutes or until steaming stops.
